Orange-Cranberry Oatmeal Cookies
This recipe makes 21 cookies about 2" diameter by 1/2" thick. 2 cookies counts as 1 NS dessert.
1/4 cup egg beater
1/2 cup applesauce
1/2 cup SF DaVinci English Toffee syrup
1/2 cup unsweetened orange juice
1 cup quick rolled oats
1/2 cup wheat germ
1 cup all purpose, whole wheat flour
1.25 tsp baking soda
1 tsp cinnamon
1/2 cup dried cranberries
1 tsp orange zest
2 tsp orange extract
1 tsp brandy extract
Preheat oven to 350 F.
Mix egg beaters, applesauce, syrup, orange juice, orange zest and extracts.
In a separate container, mix all other ingredients.
Make a well in dry ingredient mixture, add wet ingredients, stir only until moistened.
Fold in cranberries.
Place a sheet of parchment paper on a baking sheet or use a silicone baking sheet. Drop the batter a generous 2-tablespoons at a time onto the baking sheet. Bake 12 to 15 minutes.
