a lot of the white things that they "soft can" as shelf stable foods seem to have that weird off color; I remember the manila envelope colored mashed potatoes in the meatloaf dinner looked really weird to me the first time; they tasted normal, but they sure looked awful... it should be fine...I think it's just the process they use to keep things fresh.
Loved your post...I'm new too, and I had the Chicken Alfredo last night! I agree it looked a little bad, but tasted great! I layered it over steamed broccoli.
It definitely tastes better than it looks.
